Quick Gourmet Meals

One of the biggest problems that Mr. Manor and I have are that we are pretty decent cooks. It’s hard to get us to pay for a babysitter, a meal, and convince us that it was worth it. Don’t get me wrong, we love a night out, and we love great company. I’m simply referring to just the two of us going out together.

Take last night for example…eat fire side, with a pinot grigio and you’d wish you were nowhere else.

POTATO, KALE, SWEET ITALIAN SAUSAGE SOUP + SOURDOUGH GRILLED CHEESE WITH APPLES AND CARAMELIZED ONIONS

SOUP

Total Time: 25 minutes

Ingredients:

  • 1 lb. sweet Italian free range poultry sausage
  • 2 medium baking potatoes, sliced think
  • 1 onions, diced
  • 1 medium to large clove garlic, minced
  • 2 cups escarole, chopped, or kale, cut in half, then sliced
  • 2 containers organic chicken stock
  • 1/2 cup cream
  • 1 tsp crushed red pepper or cayenne pepper
  • 1 tsp dijon mustard
  • 1 tsp fennel seed
  • 1/2 cup dry white wine
  • 2 tbsp butter

Preparation:

Add some olive oil in the bottom of your soup pot to get your sausage going. Brown sausage in a skillet, breaking up, until cooked through.

Add fennel seeds, crushed pepper, garlic onions and dijon mustard to your sausage after its browned. When onions become translucent, deglaze with white wine.

Let wine cook out for about 5 minutes, add both contains of stock. Add kale first then potatos.

Stir. Add cream.

Let simmer for about 15 minutes until potatos and kale are soft. Add salt and pepper to taste. Enjoy!

GRILLED CHEESE ON SOURDOUGH WITH APPLE AND CARAMELIZED ONIONS

Total Time: 10 minutes

Ingredients:

  • 15 slices of Extra Sharp Cheddar (white)
  • 15 slices of Pepperjack (can be substuitued for pepper jelly or fig jam)
  • 1 onions, sliced
  • 3 tbsp butter
  • 2 Granny Smith Apples, thinly sliced
  • 1 loaf Sourdough
  • fresh Thyme

Preparation:

Preheat oven to 300 (F). Slice and toast the loaf of Sourdough in the toaster (yes, the toaster). In a saute pan, melt butter, and saute the onion until caramelized.

Once bread is toasted, assemble cheddar, then pepperjack, then apples, with onions on top sprinkle raw thyme. Top with top toast. Place all assembled sandwiches on cookie sheet and put in oven for approximately 5 minutes or until cheese appears to be melted. Best grilled cheese ever.
